High Protein Cookie Dough

Ingredients:

2 Tbsp of BD Peanut Butter
1/4 cup of greek yogurt
1 serving of Vanilla Protein Powder
1 Tbsp of BD Local Honey
1Tbsp of BD Almond Flour
2 Tbsp of your favorite chocolate chip from BD Provisions

Instructions:
Heat peanut butter in microwave for 10 seconds
Mix together peanut butter, greek yogurt, and honey.
Add in vanilla protein powder and almond flour and stir.
Add in chocolate chips and stir again until combined.
Let sit in the freezer for 10 min and enjoy! Store leftovers in fridge.

Yields 1-2 servings

You will need:

1 stick butter (room temperature or slightly heated in microwave)

1 egg,

1 teaspoon vanilla.

Instructions:

Preheat oven to 375 degrees F.

Prep a cookie tray with parchment paper

In a large bowl mix together soft butter, 1 egg, 1 teaspoon vanilla.  Add the dry s’more ingredients to the wet ingredients and mix.  Drop a tablespoonful onto prepared cookie sheet by tablespoonful.

Bake for 10 to 12 minutes.  Remove from cookie tray, allow to cool.

Directions

Preheat oven to 350 degrees F. 

Empty Contents of bag or jar into a large bowl.  Stir gently to incorporate all the dry ingredients.  Add oil or butter and egg.  Mix well with a wooden spoon or rubber spatula.  Drop by rounded tablespoonfuls onto a lined baking sheet.

Bake for 10 to 12 minutes, until tops are dry and edges are set.

Chocolate Joy Bites (Vegan)

Ingredients:

1 Cup BD Almond Flour

3 Tablespoons BD Vermont Maple Syrup

1 Teaspoon vanilla extract

8 oz BD Roasted Peanut Butter

1 ½ cup BD Vegan Dark Chocolate Morsels

2 Tablespoons BD Kosher Flake Salt

 

Directions:

-     Preheat oven to 250 degrees F and line a baking sheet with parchment paper

-     In a bowl, combine almond flour, maple syrup and vanilla extract until a wet dough is formed.

-     Take a tablespoonful of dough, roll it in your palms and place on parchment paper. Continue until you have used all of the dough.

-     Once all the balls are formed, create a crater in the middle of the ball using your finger to poke it.  Pinch the sides of the crater to make them thin and press into the bottom to make it flat.

-     Bake for 30 to 35 minutes.  The dough should be a hard shell, let cool.

-     Place a tablespoonful of your choice of BD peanut butter into the crater and freeze the cookies for 20 to 30 minutes.  The nut butter should be firm to the touch.

-     Melt the dark chocolate over a double boiler, stirring to incorporate it all into a smooth batter.

-     Remove the cookies from the freezer and generously coat each cookie with the melted chocolate.  Place back on the parchment paper.  Sprinkle a pinch of the kosher flake salt on top, and then back into the freezer to harden completely, about 10 minutes.

-     Remove from the freezer and enjoy!  These do not need to be frozen permanently.  Once the chocolate hardens, they can be placed at room temperature.

 

Yields 12 to 16 bites

Ingredients:

Add water to bowl, then add mix with dried fruit. Mix 1 minute on low speed, then 1 minute on medium speed. Place ¼ cup size scoops onto baking sheet. Bake at 425 degrees for 10-12 minutes. Bake time is based on a 3 oz scone.

Yields approximately 12 scones

 

Seasonal Sprinkle Cookie Mix in a Bag/Jar

You will need to add:

  • 5 TBSP of cold water

Instructions:

Empty contents of jar or bag into a large bowl. 

Using a wooden spoon, evenly incorporate the sprinkles into the dry cookie mix.

Add 5 Tb. cold water.

Stir gently with a wooden spoon until well-mixed.

Drop by rounded tablespoons onto a baking sheet.

Bake at 375°F for 12-15 minutes, until golden brown.

Beat softened butter with Peanut Butter until it is incorporated.  Add vanilla and eggs, one at a time.

Slowly add the dry ingredients until it is just incorporated.

Take 1 ½ tablespoonfuls and form into a ball, placing on baking sheet with parchment paper.  Flatten the balls with a fork, maintaining a distance of 2 inches apart.  Bake for 10 to 12 minutes.  Edges should be brown and the centers slightly puffed.  Remove from the oven, transfer to a cooling rack.

Can be stored in an airtight container for 4 days.

You will need to add:

5 Tbsp cold water

Instructions:

Combine mix and water. Mix 30 seconds on low speed and scrape bowl and blades (may also be mixed by hand). Mix another 30 seconds on low. Drop by tablespoon on greased cookie sheet. Bake at 375 for 15-16 minutes or until golden brown. Remove from cookie sheet while warm and cool on rack.
Yield: 18 (3 inch) cookies

Rocky Road Cookie in a Bag

Ingredients:

2 TBSP water

 Instructions:

Mix above wet ingredients.  Add the dry ingredients in the bag, keeping the marshmallows separate. 

Preheat oven to 375 degrees. Drop 1 TBSP of batter onto cookie sheet and bake for 8-10 min.

Add mini marshmallows on top of cookie. Place under broiler for 1 min or until golden 

Yields approximately 18 cookies

You will need:

1 stick butter (room temperature or slightly heated in microwave)

1 egg

1 teaspoon vanilla

Instructions:   

Preheat oven to 375 degrees F.  

Prep a cookie tray with parchment paper  

In a large bowl mix together soft butter, 1 egg, 1 teaspoon vanilla.  Add the dry s’more ingredients to the wet ingredients and mix. If you need the mixture to be more moist, add water to achieve the consistency you’d like.

Drop a tablespoonful at a time onto a prepared cookie sheet.

Bake for 10 to 12 minutes.  Remove from cookie sheet and allow to cool.

You will need to add:

  • 1/2 cup melted butter

  • 3/4 cup milk

  • 2 eggs

  • 1 1/2 tsp vanilla

Instructions:

  • Remove mini marshmallows from bag of mix, cut each in half and set aside.

  • In a large bowl, whisk together 1/2 cup melted butter, 3/4 cup milk, 2 eggs, and 1 1/2 tsp. vanilla.

  • Add contents of muffin mix bag to wet ingredients (do not add marshmallows).

  • Stir together just until mixed.

  • Pour batter into a greased muffin pan. Bake at 375 for 18-20 minutes, or until toothpick inserted in center comes out clean. Remove muffins from oven and immediately top with marshmallow halves, cut side down. Return to oven 1-2 minutes, just to soften marshmallows.  

  • Allow to cool 5-10 minutes and then remove muffins to wire rack to cool completely.

Yields 12 muffins.
