Mixed Bean Soup in a Bag/Jar

Ingredients:

Ingredients: Navy beans, green or yellow split peas, black beans, navy beans, kidney beans, organic onion soup & dip mix (Organic Onion, Organic Maltodextrin, Sea Salt, Organic Garlic, Organic Black Pepper.)

You will need to add your favorite stock.

Instructions:

Add all contents of the jar in a slow cooker, Instant Pot or pot on the stove.  Season with salt and pepper.  Add 3 quarts of your favorite stock. 

Slow cooker: cook on low for 8 hours.

Instant Pot: set on manual, high pressure for 30 minutes, let release naturally for 15 minutes and then quick release.

Stovetop:  Simmer on medium until beans are tender 4 to 6 hours.

Split Pea Soup

  • 3 Tbsp BD Provisions Olive Oil (BD Provisions Garlic Olive Oil is a nice upgrade)

  • 1 1/2 cups chopped yellow onion

  • 1 1/2 cups chopped celery

  • 1 tsp BD Provisions granular Garlic

  • 4 cups unsalted chicken broth

  • 4 cups water

  • 20 oz BD Provisions dried split peas rinsed

  • 2 BD provisions bay leaves

  • ½ tsp BD Provisions dried thyme

  • ½ tsp of each BD Provisions salt and black pepper

  • 1 large meaty ham bone (1 ½ lbs)

  • 1 cup chopped carrots

  • 2 Tbsp BD Provisions dried Parsley

Instructions

1.              Heat olive oil in a large pot over medium-high heat. Add onion and celery and saute 3 minutes. Add garlic and saute 1 minute longer.

2.              Pour in chicken broth and water. Add split peas, bay leaves and thyme. Season lightly with salt and with pepper to taste

3.              Nestle ham bone into soup mixture. Bring mixture to a boil, then reduce to low. Cover and let simmer, stirring occasionally until peas and ham are tender, about 60 - 80 minutes.

4.              Remove ham from soup, let rest 10 minutes then shred or dice meat portion into pieces, cover.

5.              Meanwhile add carrots* to soup. Cover soup and continue to simmer, stirring occasionally, until peas have mostly broken down, about 30 minutes longer**.

6.              Stir ham into soup, season with more salt as needed. Serve warm garnished with dried or fresh parsley

 

Hearty Soup in a Bag/Jar- Gluten Friendly

Ingredients: split green peas, red lentils, green lentils, soup greens (Dried Carrots, Dried Onion, Dried Red Bell Peppers, Dried Celery, Dried Tomato, Dried Green Bell Peppers, Dried Spinach. Processed on equipment that also processes: Crustacean Shellfish, Egg, Fish, Milk, Peanut, Soy, Tree Nuts (Almond, Brazil Nut, Cashew, Coconut, Filbert (Hazelnut), Macadamia Nut, Pecan, Pine Nut, Pistachio, Walnut and Wheat.), brown basmati rice

You Will Need to Add:

12 cups of broth of choice 

24 oz can crushed tomatoes 

Instructions: 

Bring 12 cups of broth to a boil in a large pot.  Add 24 oz can crushed tomatoes.  Add all dry ingredients and any preferred seasonings to boiling water.  Cover and simmer for 45 minutes until lentils and split peas are soft. 

Yields 6-8 servings.

Carrot Ginger Soup

Ingredients: 

2 tablespoons BD Provisions Olive Oil
2 onions, chopped fine
1/2 cup minced BD Provisions crystallized ginger
2 tablespoons grated fresh ginger
2 garlic cloves, peeled and smashed
Salt and pepper
2 1/2 pounds carrots, peeled and sliced 1/4 inch thick
5 1/2 cups water
½ teaspoon dried thyme
1 tablespoon cider vinegar

Topping:

Sour cream

Toasted Pumpkin Seeds

 

Preparation: 

1. Add Olive Oil to large saucepan over medium heat. Add onions, crystallized ginger, fresh ginger, garlic, 2 teaspoons salt; cook, stirring frequently, until onions are softened but not browned, 5 to 7 minutes.

2. Increase heat to high; add carrots, 5 cups of water, thyme sprigs and bring to simmer. Reduce heat to medium-low and simmer, covered, until carrots are very tender, 20 to 25 minutes.

3. Working in batches, process soup in blender until smooth, 1 to 2 minutes. Return soup to clean pot and stir in vinegar and remaining ½ cup of water. (Soup can be refrigerated for up to 4 days.) Return to simmer over medium heat and season with salt and pepper to taste. Serve with sprinkle of pumpkin seeds and dollop of sour cream.

Toasted Pumpkin Seeds: Take 2 cup raw BD Provisions pumpkin seeds in bowl and mix with 2 Tablespoons of BD Provisions olive oil.  Season with salt and then evenly law on cookie try.  Baked for 12-15 minutes at 350 degrees. Stir about halfway through.  Let cool and then add to soup as a topping.

Yields 5-6 servings

Morrocan Lentil Split Pea Soup in a Jar/Bag

Ingredients:
Green peas, red lentils, peas, jasmine rice, red lentils, spice mix (Minced onion, Turmeric, Smoked paprika, Salt, Cinnamon, Garlic granules, Ground pepper, Cayenne, Coriander, Cumin, Bay Leaf)

1 Quart Stock, salt to taste.

1 Quart Water

Instructions:

Combine mix with 1 quart stock and 1 quart water.

Bring to a boil and simmer, covered, for 40 minutes.

Salt to taste.

Vindaloo Soup in a Jar/Bag

Ingredients:

Garbanzo beans (chickpeas), Natural Greens (Dried Carrots, Dried Onion, Dried Red Bell Peppers, Dried Celery, Dried Tomato, Dried Green Bell Peppers, Dried Spinach. Processed on equipment that also processes: Crustacean Shellfish, Egg, Fish, Milk, Peanut, Soy, Tree Nuts (Almond, Brazil Nut, Cashew, Coconut, Filbert (Hazelnut), Macadamia Nut, Pecan, Pine Nut, Pistachio, Walnut) and Wheat.), Kidney Beans, Toasted minced onion, minced garlic, ginger, Vindaloo Curry powder, Cumin

Ingredients you will need to add:

2 Quarts Broth or Stock (We suggest chicken)

2 x 10 oz. can diced tomatoes with chilies

Greek yogurt or sour cream

Cilantro

Optional: Coconut Milk, Nan, Za’atar Pita, chips or warm bread

Instructions:

Place Vindaloo soup mix in a crockpot or Instant Pot.

Add the broth/stock, canned tomatoes

If using a crockpot or slow cooker, cook on low for 8 hours or high for 4 hours.  If using an Instant Pot, set to high pressure for 30 minutes and let release naturally for 15 minutes before doing a quick release.

With an immersion blender partially puree beans, leaving some whole bites.

Serve warm with a dollop of sour cream or yogurt along with nan, and fresh Cilantro

 

Optional Additions: May add a can of coconut milk to enhance flavors

May add 16 oz of water if you prefer a less thick soup

Vegan Chili in a Jar/Bag

Ingredients:

Onion flakes, celery flakes, garlic powder or granules, dried oregano, chili powder, ground cumin, salt, ground black pepper, garbanzo beans, black beans, kidney beans, pinto beans, vegetable flakes (Dehydrated Potatoes, Dried Carrots, Dried Red Bell Peppers, Dried Celery, Dried Green Bell Peppers. Processed on equipment that also processes: Crustacean Shellfish, Egg, Fish, Milk, Peanut, Soy, Tree Nuts (Almond, Brazil Nut, Cashew, Coconut, Filbert (Hazelnut), Macadamia Nut, Pecan, Pine Nut, Pistachio, Walnut) and Wheat.). May contain black eyed peas pending product availability.

You’ll need to add:

  • Two quarts of your favorite stock

  • 15 oz can of crushed tomatoes

  • small can of tomato paste

Instructions:

Add all contents of the jar to crock pot on Instant Pot.

Add 2 quarts (use the jar to measure) of your favorite stock.  Add a 15 oz can of tomatoes and a small can of tomato paste.

Set your crockpot on low for 8 hours or until beans are soft. If using an Instant Pot, set on high pressure for 30 minutes- let release naturally for 15 min and then quick release.

Yields 6-8 servings.
